For the many years I knew and worked with Thierry Rautureau aka the “Chef in the Hat” I’ll always remember him talking about visiting his mammy Jeannette in his hometown of Loulay, France.
He would treasure sitting down to a steaming cauldron of her “Pot au Feu” for his first and favorite meal on every visit. Mom, dressed in a house apron and cooking in her well used kitchen must have been so proud to have her famous son sit at the family table appreciating her cooking to his very last days.
Chef Ron has made a delightfully rich beef broth showcasing our version of the French classic in honor of them both.
Kristen, our gm/sommelier, has paired this dish with a delicious arnaud lambert “mazurique” 2022 cabernet franc.
With each pot au feu as well as each bottle of cabernet franc sold, we will donate $10 directly to the Idiopathic Pulmonary Fibrosis research arm at the American Lung Association. Thierry fought this disease with everything he had. While we miss him dearly this is a way for all of us to help find a cure for those afflicted with IPF in the future.
